II.1.5) Short description of the contract or purchase(s): To supply and
manage the delivery of an at seat trolley service of food and beverages on
both an existing passenger flow on London Midland passenger services,
between Birmingham - Liverpool and a new flow between London - Crewe. The
management will include, procurement, storage, handling and distribution
of catering products and the maintenance and management of catering
equipment and shorebase(s) identified as required. This service is
required to be delivered in a customer focused manner. The services will
also include the clearing away of waste generated and may also include the
distribution of sales literature, etc.

formalities necessary for evaluating if requirements are met: Proven
experience in the supply of similar services including:
(a) A list of all major contracts won, and their value, in the last 3
years;
(b) A demonstration of previous knowledge and experience of working within
the United Kingdom catering management service supply industry;
(c) A demonstration of previous experience of on board catering management
service supply within the United Kingdom rail industry;
(d) A brief history of the organisation;
(e) Details of company size, management structure and organisation
including parent company relationships;
(f) A demonstration of a complete understanding of all food hygiene
standards, rules and regulations;
(g) A demonstration of how all aspects of training inculding food hygiene
training, is managed within your business and demonstrate the processes
involved in communicating new regulations down the chain of command;
(h) Copies of all relevant food hygiene certificates;
(i) A demonstration of how risk management is approached;
(j) Details of how you would comply with the ATOC guidance note on
Training of On Train Staff in Emergency Procedures ATOC/GN003 issue
4.8.2007;
(k) A demonstration of how you would comply with TRANSEC requirements for
background security checks and managment of ID cards;
(l) A description of measures for ensuring quality control including
reference to any independent certificated audit standard achieved e.g. ISO
9001;
(m) Details of how you control the environmental impact of of your
service;
(n) Details of indemnity and third party insurance;
(o) Provision of 2 references (these may be taken up by London &
Birmingham Railway Limited);
(p) Subcontracting policy is to be provided. London & Birmingham Railway
Limited reserves the right to approve any subcontractor prior to Contract
award. Failure to provide any of the aforementioned information may
invalidate an applicants pre-qualification.
